Puliyogare : The Tale of the Tangy Indian dish

Origin and history:
The tamarind rice , puliyodharai ( Tamil ) or puliyogare( Kannada ) or pulihora (Telugu ) ,which literally means “sour rice” , is originated from the southern part of India. The dish was made widely by the Iyengar / Sri Vaishnava community . Melukote , which is located in Mandya district of Karnataka,is famous for its puliyogare and perhaps this is were you can find one of the best puliyogare in the world.
During the empire of Kulothunga Chola-II, Sri Ramanujacharya migrated from Tamil Nadu to Karnataka and was welcomed by Vishnuvardhan , the king of Hoysala,who then accepted him as his guru. The king’s original name was Bitti Deva ,which was later changed to Vishnuvardhan by his guru Ramanujacharya.
Later , to establish a monastery in Melukote , Vishnuvardhan gifted this place to Ramanujacharya. Ramanujacharya lived there for 12 years and the place ended up as the centre of Sri Vaishnava tradition.The inhabitants of Melukote were the disciples of the acharya who followed him along with his journey from Tamil Nadu and as well as the locals of Karnataka who accepted the Vaishanava faith.Then ,the temples stared serving puliyogare as the Prasad .But ,there is no strong evidence that can state whether the dish originated from Tamil Nadu or Karnataka.For now , the credits owe to Sri Vaishnava community for introducing the tantalizing dish.
Making of the dish:
Puliyogare can be made in seconds, if you have pre-cooked rice.It can be served alone or with happla,sandige,curd or fresh kosambari.To make it even more scrumptious , it is along with curd rice!! Cooking puliyogare has 2 stages: (i) preparing the pulikaachal or gojiu(puliogare paste) (ii)adding rice to prepared gojiu.
The ingredients required for the dish includes tamarind,oil,mustard seeds,cumin seeds,coriander seeds,fenugreek seeds,urad dal,channa dal,black pepper,pinch of hing,turmeric powder,dried chillies,fistful groundnut,jaggery,salt,cooked & cooled rice.
Once the pulikaachal(gojiu) is made , it can be stored separately.Whenever you want to have tamarind rice,just mix the gojiu with the cooked rice .

The first case of Corona virus has been confirmed on Long Island. There are a few things I would like to share with you. 1. I wanted to make you aware of what Revolution has been doing to keep our staff and practitioners safe since Corona virus landed in the US and what we will continue to do moving forward to keep you in your yoga practice safely during this stressful time. 2. I wanted to share some Ayurvedic wisdom in regard to this particular virus and offer some information on what is recommended by the CDC, Yoga Alliance and our insurance company if it can help our beloved community at all. 3. Lastly, even if the whole state is put under quarantine we have creative plans in place to make sure your yoga practice is not interrupted at any time. What we are doing inside the studio Surfaces Twice daily all surfaces and items commonly touched are disinfected with cleaners proven to kill coronavirus that pose no threat to our students with chemical sensitivities. Staff follow a stringent list so that nothing is forgotten and everything is cleaned uniformly each time. Disinfect your hands within the studio As of Monday March 9 we will have alcohol based hand sanitizer at the front desk for use during sign in and in all the bathrooms. Wash hands, bring fresh clothing to practice in and we should all be safe within the space we love so dearly. Mat Rentals and Props Mats rentals will now be kept behind the front desk. Please return to the front desk staff when finished so mats can undergo a deep disinfecting treatment. Props like blocks at the studio will all be disinfected twice daily and blankets will be cleaned frequently. That being said it can’t hurt to bring your own blanket to place over bolsters or use in your practice. We sell them in our shoppe up front. What you can do inside your body I wanted to share some ancient wisdom. I’ve put in orders to stock the shoppe with all you need to keep your at home apothecary ready to go just in case you need it. If we all take part in getting our bodies to their healthiest state we protect not only ourselves but others as well. Obviously this is not meant to replace the recommendations of your doctor. Proper Ayurvedic Cleanliness Protocols Oiling Oil inside the ears and nostrils (we sell nasya and ear oil in the shoppe) this will help create a barrier to viruses getting in. Massage the whole body before taking a shower. This boosts the immune system and keeps the skin healthy. They say the oil helps to bar anything bad from getting in. We carry ayurvedic daily massage oil which is good for all constitutions but also a simple coconut oil massage will suffice! Oil pull as well with coconut oil before brushing teeth. Shoes Take off your shoes in your house and the studio. We drag innumerable viruses into our houses. Go barefoot or keep house slippers by the door so you can swap into them. Wash your hands As soon as you get home before touching anything. Wash again before you eat your food, or before washing your face/ applying product. Try not to touch your eyes nose or mouth before washing hands as this is how disease most quickly enters. This isn’t Ayurvedic but I’m considering the cell phone an extension of my hands while I’m out with it during the day. Keeping rubbing alcohol and cotton balls near the sink to wipe down the phone upon arriving home can’t hurt! Cover your Mouth Avoid the spread of disease by covering your mouth with your inner arm when you cough or sneeze. Antivirals to take Proactively - Chyavanprash is an effective “ayurvedic vitamin” that is incredible for the immune system and high in natural vitamin C. It’s great to take daily. If you are fire constitution taking with cow’s or coconut milk drink beside it will help to cool its heating qualities. - Zinc Bhasma- this is a special formulation that is more easily absorbed than regular zinc supplements. - Turmeric should be a part of your every day diet or taken as a supplement. 43 Healthy Food Storage Staples (and 23 Non-Food Items to Stock Up On)

Many people in my community put a strong emphasis on emergency preparedness and making sure they have enough to survive things like loss of a job, illness, natural disaster, or economic supply shortages.
One of the most important parts of preparedness is food storage, and in Utah, it’s common due to the influence of the dominant religion here for people to stock a year’s supply of food for their entire household.
This preparation encouraged by the LDS (Mormon) people has always seemed like a smart idea to me, but while I’ve stored a year’s supply for over 30 years now, I struggled for a long time to achieve a healthy food storage supply that we would actually eat and that wouldn’t go to waste because it was so nutritionally inferior or spoiled too quickly.
A healthy food storage supply is useful in emergencies, big or small.
I threw out a lot of stuff over the years as I tried to figure out which whole-food items would work for my high health and nutrition standards, while also having a decent shelf life.

After years of trial and error, I now have a solid healthy food storage supply. I can rotate these ingredients into my regular diet and replace them as needed, so I make sure to get my money’s worth while also keeping enough on hand for emergencies.
The list of nutritious food storage items below has served me well, and I hope it helps you too, whether you copy it item-for-item or just use it as a jumping off point for a list of your own.

The Zingiberaceae botanical family to which ginger is a part of also includes turmeric and cardamom, which are both incredibly healthy spices themselves.
How to Use Ginger For Better Digestion
My favorite dishes to add ginger to are my warming soups.
Many of my clients drink ginger tea in the morning to wake up their sluggish digestion. I also sometimes add it to water, tea, or even hot water with lemon when I am traveling to settle things down after too much “hotel” food, or simply for a refreshing cleansing drink.
I also use both fresh ginger root, as well as the dried spice, in smoothies and juices.
Note that ginger does have a blood-thinning action, so it should be used with caution by those taking blood-thinning medications. And you may want to avoid consuming ginger for two weeks prior to surgery and another week following surgery. Check with your doctor.
2) Coriander Seeds/Cilantro
Coriander seeds, which yield cilantro, have been used for thousands of years to help with digestion. Both coriander seeds and cilantro are healthy, but the seeds contain more health benefits for digestion.
Coriander has carminative properties, which means it helps with gas. It is also known to have antispasmodic and stomachic properties. It calms intestinal spasms that can lead to diarrhea so it may be helpful to some people having irritable bowel syndrome. Coriander can also help settle indigestion.
As an added benefit, cilantro is packed with phytochemicals, which are super antioxidants. It is also used to lower blood sugar and is being studied in animals for its potential cholesterol-lowering benefits.
Cilantro has also been researched as a heavy metal detoxifier. In rats, it has shown to suppress lead accumulation.
How to Use Coriander and Cilantro For Better Digestion
Coriander is sold in whole seeds and in powdered form. I always buy the seeds, as the oils dissipate very quickly once they’ve been ground, usually within a few months.
Use coriander as a delicious rub in stews, pickled dishes, and marinades. You can also add it to soups and smoothies.
Fresh cilantro is wonderful in hot and spicy dishes because of its cooling effect. Just chop up a little cilantro and throw it in whatever dish you are cooking. It encourages the production of supportive digestive enzymes that break down your food.
3) Cardamom
Cardamom is part of the ginger family, so no wonder it’s helpful for your digestion.
It has been used in Chinese and Ayurvedic medicine for centuries but is also backed by science as having actions that help relieve bloating and gas (aka carminative properties). It also has antispasmodic properties, as it can slow the rate of stomach muscle cramping.
Cardamom also stimulates the appetite along with easing gas, nausea, indigestion, and cramping. It helps to kill off any food-borne bacteria in the digestive tract, thus helping to protect against food poisoning and gastric distress.
Cardamom pods contain a compound called limonene, which is usually found in citrus peels. It is known to dissolve cholesterol-containing gallstones, as well as relieve heartburn and gastroesophageal reflux (GERD).
Cardamom also has antioxidant benefits, as well as being a good source of minerals, such as iron, manganese, calcium, and magnesium.
Cardamom works well as a diuretic and can reduce bloating, water retention, swelling, and edema.
How to Use Cardamom For Better Digestion
Cardamom is often used in sweet and savory dishes. And it can be prepared as a delicious, warming tea by placing four cardamom pods in two cups of water and simmer for 30 minutes. Sweeten with stevia, if desired.
Cardamom pods can be chewed on to relieve tooth and gum pain, as well as prevent infection.
4) Fennel Seeds
Fennel stimulates the production of gastric juices and is another great spice having carminative properties. It is often used as an after-dinner digestive aid. It also has antispasmodic properties.

A good trick (thanks to my friend and peer, Dr. Alan Christianson) to reduce bloating and gas, is to heat fennel seeds on low in a skillet with some sea salt.
Let them get slightly brown, and then store them in a tightly closed container. You can add a few pinches of these slightly cooked seeds to any of your dishes. It really works!
6 Other Spices That Can Help Digestion
Turmeric — This Indian spice aids digestion while soothing your digestive tract. It has been found to help relieve heartburn, reduce stomach pain (due to its anti-inflammatory and antibacterial compounds), reduce flatulence, and more.
Cumin — Cumin is another great spice for digestion and is great for heartburn.
Lemon Balm — One of my digestive spice favorites is lemon balm!
Garlic — Garlic protects gut immunity.
Fenugreek — Fenugreek acts as a natural digestive and helps flush out toxins from the body.
Cinnamon Bark — Warming cinnamon bark is a mild but useful remedy for sluggish digestion. The German Commission E recommends it for loss of appetite, dyspeptic complaints, bloating, and flatulence.
There are other great spices for digestion. Just go to a reputable herb and spice shop online and do a little research. You’ll find that a lot of the Italian spices are also good for digestive support.

Fenugreek: Nature's Next Superfood
Fenugreek (Trigonella foenum-graecum) is a wonderfully versatile annual herb from the pea family (Fabaceae). It is native to Southern Europe, the Middle East and Western Asia. It was first mentioned in the Egyptian Medical Ebers Papyrus in 1500BCE as a medical herb and to embalm the dead. The fenugreek plant is quite hardy and reaches 2-3ft which makes it an ideal cover or overwintering plant in arable agriculture. Fenugreek is also a nutritional powerhouse so the ancient Greeks & Romans used it for cattle fodder, a practice which is still followed today. But of course, most people will know Fenugreek for its culinary uses; the seed pods contain 10–20 small, flat, yellow-brown, pungent and aromatic seeds which are used to season curries, and the green tops can be used like spinach where it is called methi in Hindi.
Fenugreek seeds have a somewhat bitter taste, vaguely similar to celery, maple syrup or burnt sugar. In order to take the bitterness out of the seeds, heating them in a frying pan or skillet, or frying them on oil, is necessary. Most Indian households cannot do without methi or fenugreek seeds and leaves. It is used in almost every Indian preparation, be it dal, paratha or curry. My favourite use of methi is to make Methi Aloo; fring dried or (ideally) fresh methi leaves, with potatoes in heroic amounts of ghee and salt. There is an impressive amount of research data which confirms fenugreek as being a potent anti- inflammatory, cholesterol lowering, appetite increasing, energy and libido raising herb. It can even improve lactation in new mothers. In the Indian medical system of Ayurveda, Fenugreek is considered a warming spice, and contributes the bitter, pungent and sweet tastes. It is used to enhance digestion and prevent stomach disorders. It is also good for the skin and hair. Fenugreek seeds can be used both whole and ground. Powdered seeds can also be used topically (applied to the skin) to reduce inflammation, skin problems, injuries, etc. In short, it is a medicine chest and likely at some point to be classed as a 'superfood'.
And the best news of all- fenugreek is easy to grow in the UK climate! Obtaining seeds is straightforward; just use any supermarket seasoning variety or a World Food store where the seeds can be bought in bulk quite cheaply. They can be sown outdoors by sprinkling over a patch of well-drained soil in full sun, raking over, and watering well. The soil should be rolled after sowing to increase soil moisture contact with the seed. The ideal sowing time for fenugreek is generally between March – May. The seeds germinate quickly to form a low mat of clover-shaped leaves about 30cm high, which can be used as groundcover between taller, widely spaced crops. This is an example of a self- mulching multi- layered agriculture system. Despite being a Mediterranean crop, fenugreek will show a surprising resilience to hard frosts. This crop rapidly produces large amounts of biomass. Its growth is vigorous enough to compete against weeds without the need for cutting. Fenugreek has few pest and disease problems. This crop has a very short persistence, as it will start to flower and set seed after a few months and ideally as a green manure, the plant should be dug back into the soil before flowering to preserve nitrogen. Having said that, bees do love the flowers of fenugreek. The RHS perhaps disparagingly say of fenugreek cultivation: "This annual legume will only grow in the spring and summer; it is unlikely to fix nitrogen in the UK. "
However this nitrogen fixation problem can be overcome. When sowing fenugreek the seeds need to be ‘inoculated’ with the bacterium Rhizobium meliloti. This culture is bought in sachets and mixed with the seed at the time of sowing. It is a relatively simple process and only needs doing once per crop. That way you can utilise the range of culinary, medicinal, and cultivation functionalities of this unsung plant.

Know All About Cholesterol – The Rising Health Menace of Today’s Times!
After satiating my taste bud with some heavenly food essentially high on calories, my friend remarked that eating deep fried and junk food in excess would only increase my cholesterol level which would later lead to a lot of health problems for me. The rude remark not only made me sad but the pleasure of eating such a lovely preparation was replaced with anxiety and a deep-rooted fear about my rising levels of cholesterol in my body. What if my cholesterol level had actually gone up in all these years because of my indulgence in all kinds of junks, street food and deep fried items? I also learned that there are two types of cholesterol; LDL (Low-Density Lipoproteins), which is the bad cholesterol and HDL (High-Density Lipoproteins), which is the good cholesterol. I also found that cholesterol could be both good and bad. If maintained at a normal level, it is essential for the body; but if its concentration in the blood increases, it becomes a silent killer.
It is important for us to understand that cholesterol performs four main functions in our body quite essential for our survival, which is contributing to the structure of cell walls, making up digestive bile acids in the intestine, allowing the body to produce vitamin D and enabling the body to make certain hormones. Now the question arises as to what the causes of high cholesterol in our body are. High cholesterol is a significant risk factor for coronary heart disease and a cause of heart attacks. A build-up of cholesterol is part of the process that narrows arteries, called atherosclerosis, in which plaques form and cause restriction of blood flow.
Our cholesterol level can tell us important information about our heart health which we may not know otherwise unless we get that test done. That is because high cholesterol often does not cause any symptoms until something serious like a heart attack occurs. Tulsi plants also produce spikes of small pink or lavender blossoms, and fruits that are reminiscent of rust-colored nuts.2,3 The tulsi plant is highly sensitive to frost and thrives best in warm Mediterranean climates, just as other basil species do. But while it grows best out in the garden, you can still grow this herb indoors.4 Because of its many beneficial properties, tulsi has been dubbed the "Queen of Herbs."5 The name itself translates to "the incomparable one," which probably refers to the numerous health benefits it can provide.6 Tulsi is one of the principle herbs of India's ancient holistic health system called Ayurveda. In fact, Ayurveda means "knowledge of life," and herbs are at the center of this practice. This is why it's not surprising that tulsi oil has also garnered considerable attention, particularly because of its soothing effects. The unique fragrance and medicinal qualities that holy basil oil offers definitely make it deserving of the title "elixir of life."7 Tulsi oil has a sharp, fresh, earthy and minty fragrance that's described to be similar to licorice.8 It is pale yellow and has a thin consistency.9 Uses of Tulsi Oil In India, tulsi is an herb that is considered sacred, mainly because it represents the goddess Lakshmi, the wife of Vishnu, who is one of Hinduism's most important deities.10 There is even an ancient custom in India to worship the plant twice a day, water it and place lamps near it, once in the morning and then at night. Hindus believed that it brings good luck while protecting their family from evil and harm.11 Every part of the plant, from the leaves to the seeds, have astounding uses for the body. For example, the whole plant can be used to alleviate vomiting, nausea and diarrhea, while mixing the leaves and seeds with black pepper may have potent effects against malaria.12 Pills and ointments made from tulsi may be effective against eczema, while an alcohol extract can work for eye problems and insect bites. Fresh tulsi flowers are said to ease bronchitis symptoms.13 In fact, there's a belief that even being physically close to a tulsi plant can protect you from different infections. It's said that adding a few leaves in food or drinking water may help purify and kill germs in it. Even smelling it may help protect against coughs, colds and other viruses.14 Tulsi oil, in particular, is said to be effective for warding off insects, when used as a bug repellent. All that you need to do is dilute the essential oil in a safe carrier oil or purified water, and then apply it to the body (make sure that you have no sensitivities to this plant before doing this). Diluted tulsi oil may also work as a good deodorizer to help eliminate body odor.15 Composition of Tulsi Oil Eugenole makes up a large bulk of tulsi oil's composition, in some cases up to 85 percent. This is the same constituent that gives clove oil its significant fragrance, which is why these two oils have occasionally been confused with each other. Other beneficial compounds in tulsi oil include estragole, 1,8-Cineole, B-Bisabolene and (Z)-a-Bisabolene.16 Benefits of Tulsi Oil Both the tulsi plant and the essential oil made from it offer wholesome health benefits, such as:17 • Helping relieve skin problems and warding off mosquitoes. • Helping protect against cardiovascular problems. The eugenol in tulsi may help manage cholesterol levels in the blood. • Alleviating fever. It is an excellent germicidal, antibiotic, fungicidal and disinfectant, and may efficiently protect your body from pathogenic organisms. • Easing respiratory ailments like bronchitis. It helps relieve respiratory congestion, thanks to its beneficial components. • Providing protection against dental problems. It helps eliminate bacteria that may cause tartar, cavities, bad breath and plaque, while providing a protective effect at the same time. Its astringent properties also help the gums hold the teeth tighter, so they will not fall out easily. How to Make Tulsi Oil Pure tulsi essential oil can be extracted through steam distilling the leaves and other parts of the plant.18 When purchasing tulsi oil, make sure that you buy from a manufacturer that doesn't use harmful chemicals or solvents during the extraction process. You can also make a simple tulsi oil infusion at home using this method from VisiHow. This infusion oil is recommended for alleviating scalp problems:19 Materials: 1 to 2 bunches of tulsi leaves (enough to make 10 teaspoon of tulsi paste) 1/2 cup coconut oil 1 to 3 cups fenugreek grains Procedure: Cut and grind the tulsi leaves until they form a paste. You need about 3 1/4 tablespoons of paste. Transfer the paste to a pot. If there's more paste than needed, freeze the rest in a muffin tin. Mix the half a cup of coconut oil with the tulsi paste, and put over low heat. Add 1 to 3 cups of fenugreek grains. Wait for the grains to pop, and then turn off the heat. Let the mixture cool before storing in a sealed container. How Does Tulsi Oil Work? Tulsi works best when diffused in the air or when inhaled. By doing this, it can help ease anxiety and stress while enhancing focus. However, this oil should never be ingested.20 Pure tulsi oil is also ill-advised for topical use, unless it has been thoroughly diluted in a safe and mild carrier oil. Since this essential oil is dermocaustic and can lead to skin irritation, it needs to be prepared in an extreme dilution of 0.5 percent or less.21 Is Tulsi Oil Safe? If diluted properly, tulsi oil is non-toxic and non-sensitizing, and is generally safe to use. However, it is still recommend to perform a skin patch test to ensure that you have no sensitivities or allergies to this oil. Simply put a diluted drop on your arm and see if any irritation occurs. Tulsi oil is not recommended for pregnant or breast-feeding women, as well as for children under 2 years oil. People who are susceptible to seizures or who have epilepsy should also refrain from using it.22 Side Effects of Tulsi Oil Despite its benefits, keep in mind that both tulsi and tulsi oil may have potential side effects,23 such as: • Eugenol overdose — Excessive intake of the tulsi herb can lead to overdose symptoms, which can manifest as expelling blood while coughing or in the urine, and rapid breathing. • Blood-thinning effects — People who are on blood-thinning drugs should refrain from ingesting tulsi. • Hypoglycemia — This is having abnormally low levels of blood sugar. Tulsi's blood sugar-lowering effects may cause this, so diabetics should consult their doctor before using this herb or its essential oil. • Infertility in men — A study found that tulsi led to a significant decrease in sperm count among test rabbits.24 • Premature labor — Uterine contractions may be stimulated because of tulsi, which is dangerous for pregnant women. It can also lead to complications in childbirth or with menstruation. Lastly, tulsi can interfere with the body's way of processing certain medications. If you're dealing with a health problem, consult your physician before using either tulsi oil or the raw plant.
